“Farm-to-table is a concept that emphasises the importance of bringing fresh, locally produced ingredients directly to the consumer’s table. This approach not only supports local farmers and reduces the need to transport and store food, but also ensures that the food is fresh and nutritious. With this in mind, roasted vegetables are a simple dish that brings out the full flavour of the ingredients.

Preparation

  • Fresh root vegetables: e.g. carrots, potatoes, beetroot, each in quantity.
  • Fresh leafy greens: e.g. broccoli, cauliflower, each in quantity
  • Onion: 1
  • Garlic: 4 cloves
  • Olive oil: moderate
  • Sea salt: to taste
  • Freshly ground black pepper: to taste
  • Fresh herbs: e.g. rosemary, thyme, to taste.

Preparation steps

1. Vegetable Preparation

  1. Clean, peel and cut all root vegetables into uniform pieces.
  2. Wash the broccoli and cauliflower and cut them into small pieces.
  3. shred the onion, slice the garlic and set aside.

2. Seasoning

  1. Place the chopped vegetables in a large bowl and add enough olive oil to ensure that the surface of the vegetables is evenly coated with oil.
  2. Sprinkle with a good amount of sea salt and freshly ground black pepper and add the fresh herbs. Toss gently using your hands to evenly coat the sliced vegetables with the seasoning.

3. Bake

  1. Preheat the oven to 200°C. 2.
  2. Spread the seasoned vegetables evenly on a baking tray, taking care not to stack them.
  3. Place the baking tray in the middle of the oven and roast for about 30-40 minutes, depending on the thickness of the vegetables and the oven conditions. You can turn the vegetables once halfway through to ensure even heating.

4. Remove from oven

  1. Roast the vegetables until the edges are crispy and the centre is softly cooked.
